Ingredients

  • 1 cup pecan halves
  • 1 cup flaked coconut
  • ½ cup almonds
  • ½ cup pumpkin seeds
  • ½ teaspoon salt
  • ⅓ cup butter
  • ¼ cup Swerve Brown
  • ¼ cup powdered Swerve Sweetener
  • ½ teaspoon vanilla extract or maple extract

Instructions

  1. Preheat your oven to 300ºF and line a large baking sheet with parchment paper.
  2. In a food processor, combine pecans, coconut, almonds, pumpkin seeds, and a pinch of salt. Pulse until you have coarse crumbs, it's okay if there are a few larger pieces.
  3. In a large saucepan over low heat, melt the butter and add the sweeteners. Stir until the sweeteners mostly dissolve, then remove from heat and add the vanilla extract.
  4. Mix the nut mixture into the butter mixture until well combined. Spread this mixture evenly on the prepared baking sheet. Cover with waxed paper or parchment, and press down firmly to an even thickness.
  5. Bake for 20 to 30 minutes, until it turns golden brown. Let it cool completely, then break it into large chunks with your hands.
  6. Store the clusters in an airtight container on the counter for up to a week.

Notes

Storage Tip: These clusters can be kept at room temperature in a covered container for over a week since they don't contain perishable ingredients. Glass jars or Tupperware both work well for storage.
