Sauteed Garlic- Butter Cauliflower Turkey

Ingredients
- 1 lb (450g) ground turkey (or ground chicken)
- 1/2 head cauliflower, sliced into florets
- 2 tablespoons extra virgin olive oil
- 1 tablespoon lemon juice
- 3 tablespoons butter
- 2 tablespoons minced garlic
- 1 tablespoon onion powder
- 1/4 cup (60ml) low-sodium soy sauce (or coconut amino, for Paleo)
- 2 tablespoons hot sauce (we used Sriracha)
- 2 teaspoons sesame oil
- Fresh chopped cilantro (or parsley)
- 1/4 cup (60ml) water
- Red chili pepper flakes
- Lemon slices, for garnish
Instructions
1. Heat a large skillet over medium-low heat with a tablespoon of extra virgin olive oil.
2. Cook the pre-cooked cauliflower florets until slightly golden brown, being careful not to burn them. Add lemon juice, fresh cilantro, salt, and pepper to taste. Toss well and transfer to a plate.
3. In the same skillet (rinse if needed), melt butter with another tablespoon of oil. Cook ground turkey, breaking it apart with a wooden spoon.
4. When no longer pink, add garlic and onion powder. Stir in soy sauce, water, and hot sauce. Cook for a few more minutes, stirring regularly.
5. Push the turkey aside and add the cauliflower back to the skillet. Reheat and coat it in the sauce. Drizzle with sesame oil, sprinkle with fresh cilantro, red chili pepper flakes, and garnish with lemon slices. Serve and enjoy!
Notes
- For quicker cauliflower cooking, microwave florets with 1/4 cup of water, covered, for 4 minutes before sautéing.
- If you want extra sauce, cook butter, garlic, and onion powder separately, then deglaze with soy sauce and hot sauce. Add a little water if needed. Serve alongside cooked ground turkey and cauliflower.
- Use low-sodium soy sauce and skip adding extra salt, as the dish is already flavorful enough!
