This grain-free bread alternative is a superb choice. It boasts a texture akin to whole-wheat bread but with the added nutritional goodness of chia seeds and almond flour. Ingredients

  • 250 g / 1 cup Greek yoghurt
  • 3 eggs
  • 1 cup / 100g almond flour
  • 2 tbsp / 12g coconut flour
  • 3 tbsp / 18g ground flax seed
  • 3 tbsp / 30g chia seeds
  • ½ tbsp / 6g baking powder
  • ½ tsp / large pinch salt
  • 2 tbsp / 15g sunflower seeds optional

Instructions

  1. Line a small loaf tin (450ml capacity) with parchment paper.
  2. In a bowl, use an electric mixer to mix eggs and Greek yogurt until smooth.
  3. Add almond flour/ground almonds, coconut flour, baking powder, and salt. Mix thoroughly.
  4. Next, incorporate chia seeds and ground flax seeds. If using, add sunflower seeds too.
  5. Transfer the dough into the loaf tin and let it sit for 15 minutes to allow the flax and chia mix to absorb the liquid. Sprinkle sunflower seeds on top.
  6. Preheat the oven to 170°C / 340°F.
  7. Bake for approximately 45 minutes, or until the top is lightly browned and a knife inserted comes out clean. Let cool down, serve and enjoy!

Notes

  • Add 1/4 cup of shredded parmesan cheese if you want a hint of cheesy taste.
