Ingredients

  • 2 1/2 lbs Chicken drumsticks
  • 1/4 cup Wholesome Yum Coconut Flour
  • 1/2 tsp Sea salt
  • 1/4 tsp Black pepper
  • 2 large Eggs
  • 1 cup Pork rinds (2.25 oz)
  • 1 tsp Smoked paprika
  • 1/2 tsp Garlic powder
  • 1/4 tsp Dried thyme
  • Cooking spray

Instructions

CHICKEN MIX:

  1. In a medium shallow bowl, combine coconut flour, sea salt, and black pepper. Set it aside.
  2. In a second medium bowl, beat the eggs. Set them aside.
  3. In a third bowl, mix crushed pork rinds, smoked paprika, garlic powder, and thyme.
  4. Begin by coating the chicken pieces in the coconut flour mixture, then dip them in the eggs, making sure to shake off any excess. Finally, press the chicken into the pork rind mixture.
  5. For best results, keep the majority of the third mixture in a separate bowl. Add it little by little to the bowl when coating the chicken. This will prevent it from clumping up too quickly.


FOR OVEN:

  1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius).
  2. Cover a baking sheet with foil and place a rack that's safe for the oven on top of it. This will help the chicken cook evenly.
  3. Put the chicken legs on the rack, making sure they're spread out and not touching each other.
  4. Bake the chicken legs in the preheated oven for 25 minutes.
  5. After 25 minutes, take the chicken out of the oven and use tongs to carefully flip them over.
  6. Put the chicken back in the oven and bake for another 10-20 minutes. Keep an eye on them. They're done when a meat thermometer reads 165 degrees Fahrenheit (74 degrees Celsius) in the thickest part of the meat.

FOR AIR FRYER:

  1. Begin by preheating the air fryer.
  2. Lightly grease the air fryer basket to prevent sticking.
  3. Arrange the breaded chicken in the basket, making sure they are in a single layer and not touching.
  4. Give the chicken a light spray of cooking oil on all sides.
  5. Cook the keto fried chicken in the air fryer until it reaches an internal temperature of 170 degrees Fahrenheit (77 degrees Celsius).
