Berry Cheesecake Salad

This is the perfect low carb recipe for cheese cake lovers and the best part is that it only need four main ingredients. You'd probably spend more time savoring each spoonful than actually making it!

Ingredients
- 16 ounces cream cheese softened
- ¼ cup monk fruit concentrated powder
- ¼ cup stevia concentrated powder
- 1 cup heavy whipping cream
- 16 ounces strawberries cut into bite sized pieces
- 14 ounces blueberries about 4 cups
- 12 ounces blackberries about 2 cups
- 6 ounces raspberries about 1 cup
- 2-3 teaspoons vanilla extract optional
Instructions
- Using an electric mixer, blend cream cheese until it reaches a smooth consistency.
- Add monk fruit, stevia, heavy whipping cream, and vanilla extract (if desired).
- Continue beating until the mixture becomes thick and creamy. If it's too dense, add a bit more cream.
- Gently fold in fresh berries. Refrigerate or serve promptly. Enjoy!
Notes
- You can substitute about ½ cup of Swerve or Splenda for the monk fruit and stevia blend.
