Almond Flour Waffles

Enjoy these Almond Flour Waffles with crispy perfection on outside and fluffy goodness on the inside with 0just one bowl or blender. It's not only easy to prepare but also a great choice for a low carb diet. You can now enjoy a full hearty breakfast without worrying about the extra calories or added sugar.

Ingredients

  • Almond flour– Blanched or superfine almond flour.
  • Granulated sweetener of choice– Either monk fruit sweetener or erythritol.
  • Baking powder– Adds fluffiness to waffles
  • Coconut oil OR butter– for moisture and better texture
  • Eggs– Room temperature eggs are preferred.
  • Yogurt– Plain, coconut or Greek yogurt for normal waffles. If want thick waffles heavy cream can be used.
  • Vanilla extract- Optional, for vanilla flavor.

Instructions

    1. Combine all your ingredients in a high-speed blender and blend until smooth.

    2. Grease waffle iron and, once heated.

    3. Pour 1/4 to 1/2 cup portions of the batter onto it. Cook until the edges turn crispy.

    4. Repeat the process until all the batter is used up. Enjoy your delicious waffles!

Notes

Blending:

  • If your batter is too runny, incorporate additional almond flour.
  • Use thick, less runny yogurt, because thinner varieties can lead to a watery batter. (Cream cheese is an excellent alternative especially for persons on keto diet.)

For storage:

  • You can keep left over waffles covered in the refrigerator for up to one week. To freeze,
  • Place Left overs in a Ziplock bag if you want to freeze them. Waffles will last for around six months with this storage method.

Reheating:

  • Avoid using a microwave
  • Use a toaster, non stick pan. or a preheated oven for consistent texture.
