Chunky Beef Lentil Soup

Ingredients

  • 2 tablespoons olive oil or avocado oil
  • 1 pound boneless beef chunk cut into 1-inch cubes
  • Salt and freshly ground black pepper
  • ½ teaspoon ground cumin
  • 1 large carrot peeled and medium diced
  • ½ large onion chopped
  • 3 garlic cloves chopped
  • 1 cup dry red wine such as merlot or cabernet sauvignon
  • 9 cups beef broth
  • ½ tablespoon tomato paste
  • 1 cup dry brown lentils washed and rinsed
  • ½ lemon
  • ¼ cup fresh parsley chopped

Instructions

  1. Season beef with salt, pepper, and cumin in a medium bowl. Cover and let sit for 30 minutes.
  2. In a large stainless steel pot, heat oil over medium-high heat. Brown the beef for 6-8 minutes, stirring occasionally.
  3. Take beef out of pot and transfer to another bowl.
  4. In previous used pot, reduce heat to medium, add carrots and onion.
  5. Cook until onions are translucent (about 4 minutes), then add garlic and cook for another minute. Then return beef and juices to the pot. Add wine, broth, and tomato paste. Stir well.
  6. Bring soup to a boil, then reduce heat, cover, and simmer for 30 minutes, stirring occasionally.
  7. Add lentils and baking soda. Continue simmering uncovered until beef and lentils are tender (approximately 35-40 minutes, checking and stir after 20-30 minutes).
  8. Season with salt and black pepper. Remove from heat and stir in lemon juice and parsley. Serve and enjoy!
