Low Carb Strawberry Bread

Ingredients
- 5 medium eggs room temperature
- 2 cups almond flour
- 3 tbsp coconut flour
- 1/2 cup sweetener
- 1 cup strawberries chopped
- 3 tbsp heavy cream or coconut cream
- 3 tbsp butter melted
- 1 tsp baking powder
- 1-2 tsp vanilla extract
Instructions
1. Preheat your oven to 350°F (180°C) and line a 9x5-inch loaf pan with parchment paper.
2. In a large bowl, whisk together the eggs, heavy cream, and vanilla extract until frothy (about 2-3 minutes).
3. Gradually add and mix in the almond flour, coconut flour, sweetener, and baking powder until you have a smooth batter.
4. Add the butter and continue mixing.
5. Gently fold in the strawberries, then pour the batter into the prepared loaf pan.
6. Bake for approximately 45-50 minutes, or until a toothpick inserted into the center comes out clean.
7. Let the bread cool in the pan for at least 10 minutes before transferring it to a wire rack to cool completely. Slice & Enjoy!
