Tuscany Salmon in Creamy Garlic Sauce

This dish brings together pan-fried salmon, prepared to perfection with a sumptuous garlic butter spinach and sun-dried tomato cream sauce that will whisk you away to the heart of Italy. Ingredients
- 3 salmon fillets
- 2 teaspoons olive oil
- 2 tablespoons butter
- 5 cloves garlic, finely diced
- 1 small yellow onion, diced
- 1/3 cup (80ml) vegetable broth
- 5 ounces (150g) jarred sun-dried tomato in oil, drained of oil
- 1 3/4 cups heavy cream
- Salt and pepper, to taste
- 3 cups baby spinach leaves
- 1/2 cup grated Parmesan
- 1 tablespoon fresh parsley, chopped
Instructions
1. Heat oil in a large skillet over medium-high heat. Season salmon with salt and pepper. Cook each side for about 5 minutes or until desired doneness. Remove and set aside.
2. In the same pan, melt butter and add garlic, cooking for about a minute. Add onion and cook until translucent. Stir in sun-dried tomatoes, cooking for another 1-2 minutes. Pour in vegetable broth and let the sauce reduce.
3. Reduce heat, pour in heavy cream, and simmer while stirring occasionally. Season with salt and pepper. Add baby spinach and let it wilt, then mix in parmesan cheese. Simmer for another minute until cheese melts.
4. Return the salmon to the pan. Sprinkle with parsley and spoon sauce over each filet.
5. Serve creamy Tuscan salmon over steamed vegetables, cauliflower rice for Keto, or regular rice or pasta. Enjoy!
