Zucchini Fritters

Not only are these low carb Fritters satisfying but can be an effective way to add some nutrition to your diet. If its your first time preparing these tasty fritter treats don't be surprised when family and loved one ask for more.

Ingredients

  • 2 medium zucchini (about 400 grams or 14 ounces), ends removed
  • 3 ounces ricotta cheese or see notes above for swapping
  • ½ cup coconut flour or see notes above for swapping
  • 2 eggs
  • 1 teaspoon lemon zest or lime zest
  • 1 tablespoon fresh basil chopped or fresh parsley
  • ½ teaspoon onion powder
  • ½ teaspoon garlic powder
  • sea salt and black pepper to taste
  • olive oil, avocado oil or coconut oil for frying

Instructions

    Pan Fry Instructions

  1. Prepare the Zucchini: Grate or shred the zucchini and let it drain in a colander for 10 minutes.
  2. Remove Excess Moisture: Transfer the zucchini to a clean kitchen towel or paper towels. Squeeze out as much moisture as possible until the zucchini is nearly dry.
  3. Mix Ingredients: Place the drained zucchini in a large bowl. Add the remaining ingredients (excluding the oil) and mix well.
  4. Chill the Mixture: Refrigerate the mixture for 30 minutes to help it thicken.
  5. Heat the Pan: Heat a few tablespoons of oil in a frying pan or large non-stick skillet over medium heat.
  6. Cook the Fritters: Drop about ¼ cup of the mixture into the hot oil at a time. Use a spoon to shape and flatten the mixture into fritters. You should be able to make about 10 fritters.
  7. Fry Until Golden: Cook the fritters until they are golden brown on both sides. Enjoy them right away!

Baking Instructions

  1. Preheat Oven: Set your oven to 350°F (175°C).
  2. Prepare the Baking Sheet: Line a baking sheet with parchment paper.
  3. Scoop the Batter: Drop 10 scoops of zucchini batter onto the lined baking sheet.
  4. Bake: Bake for 12-15 minutes, or until the fritters are golden brown.

Air Fryer Instructions

  1. Arrange Fritters: Place the zucchini fritters in a single layer in the air fryer basket. For easier cleanup, use a silicone or parchment liner.
  2. Air Fry: Cook at 400°F (200°C) for about 8-10 minutes, or until they are golden brown.
