Ingredients
- DRESSING:
- 1 tbsp olive oil
- One tbsp lime juice
- 1 garlic clove minced
- ¼ teaspoon salt
- SALAD:
- 1 cup watermelon small cubes
- 2 cups sliced cucumber
- 1 avocado small cubes
- ⅓ cup onion chopped
- ½ cup feta cheese crumbled
- ¼ cup basil or mint leaves Torn in small pieces
- ½ jalapeño or seasoning pepper thinly sliced (optional)
- Salt & Pepper to taste
Instructions
- whisk together dressing ingredients In a small bowl
- Set Feta Cheese aside and combine all of the salad ingredients- in another bowl.
- Drizzle dressing over salad then crumble feta cheese on top so that it doesn't soak up the moisture too much.
- Serve and enjoy!
