  • ▢1 large egg

  • ▢4 cups homemade tomato sauce or your favorite sauce
  • ▢16 ounces shredded mozzarella cheese
  • ▢2 tablespoons chopped parsley

Instructions

1. Preheat the oven to 375°F. Arrange the eggplant slices in a single layer on a clean surface. Sprinkle coarse salt over the slices and set them aside for 10 minutes. Afterward, use a paper towel to remove excess moisture and salt.

2. Next, in a grill pan, place the eggplant slices and grill each side for about 3 minutes. It's crucial not to skip steps 2 and 3 to prevent the lasagna from becoming too soupy.

3. In a medium bowl, thoroughly mix ricotta cheese, Parmesan cheese, and an egg. Ensure it's well combined.
