Egg white Cloud Bread

Unlike other cloud bread recipes, this distinctive egg white variation doesn't require using the separated yolks and includes the added nutrients found in sliced almonds. With its low-fat and low-carb profile, this recipe offers an excellent choice for a sugar-free snack alternative.

Ingredients

  • 5 large egg whites
  • ½ teaspoon xanthan gum or 1 teaspoon of cornstarch if you're not on a keto diet
  • ½ teaspoon cream of tartar or 1 teaspoon fresh lemon juice
  • ¼ teaspoon salt
  • 1 teaspoon almond extract or pure vanilla extract. You may also add a few drops of food coloring to color the bread!
  • 3 tablespoons granulated erythritol or any granulated sweetener of choice such as granulated white sugar if you're not on a keto diet
  • ½ cup sliced almonds plus extra for topping. (optional)

Instructions

1. Preheat your oven to 300°F (150°C).

2. Ensure your mixer bowl is clean and dry.

3. Beat the egg whites until foamy. Add xanthan gum, cream of tartar, and salt. Beat until soft peaks form.

4. Add the extract and continue beating. Gradually add the sweetener until mixture is very thick.

5. Gently fold in the almonds with a spatula. Create 4 tall mounds on a parchment-lined baking sheet.

6. Decorate with sliced almonds.

7. Bake for 45-55 minutes until golden and firm.

8. Let cool slightly before enjoying this fluffy delight!

Notes

  • Once cooled, the fluffiness of the cloud bread diminishes, and its cloud-like appearance fades. The longer it rests, the more it may wrinkle and deflate. For the best experience, enjoy cloud bread right after it comes out of the oven.
