Asado Chicken Breast & Zucchini

Tender boneless chicken breasts are transformed into a mouthwatering dish through a flavorful marination process. Ingredients
- 3 lbs (1 1/2 kg) Chicken breast
- 2 to 3 medium-sized zucchini, diced
- 8 Garlic cloves, minced
- 2 teaspoons Oregano
- 1 tablespoon smoked Paprika
- 2 teaspoons Cumin Powder
- 1/4 cup (60ml) chicken stock
- 1/4 cup (60ml) lemon juice, more for serving
- 1/2 teaspoon Onion Powder
- 1/2 teaspoon Chili Flakes
- 1/4 cup (60ml) Olive Oil
- Salt and fresh cracked black pepper
Instructions
1. Combine paprika, cumin, chicken stock, lemon juice, onion powder, oregano, garlic, chili flakes, and olive oil in a bowl. Adjust salt and lemon to taste.
2. Coat chicken breasts with the mixture, cover, and marinate in the refrigerator for at least 30 minutes. When ready to cook, remove chicken from marinade.
3. Heat 1 tablespoon oil in a skillet. Cook chicken on both sides until internal temperature reaches 165ºF (74ºC), about 15 minutes. Keep warm.
4. In the same pan, add diced zucchini. Season with salt, pepper, and red chili pepper flakes (if using). Sauté for 2-3 minutes. Then, add the remaining marinade. Cook for 3-4 minutes, until sauce has reduced and zucchini are tender.
5. Divide sautéed zucchini and sauce into plates. Top with sliced chicken breasts. Garnish with lemon slices and fresh parsley. Add a splash of lemon juice for extra flavor. Enjoy your Asado chicken!
