Ginger Snap Cookies

Whether its for a healthy snack or for a holiday treat, these ginger snap cookies will delight your taste buds. Ginger is loaded with health benefits, and is even better when made as a tasty treat that won't make you put on those extra pounds.
Ingredients
- 2 cups almond Flour superfine, blanched
- 1 tbsp coconut flour
- 6 tbsp Unsalted butter softened
- 1/3 cup brown sugar replacement
- 2 tsp cinnamon
- 1/2 tbsp ground ginger
- 1 tsp ground cloves
- 2 tsp molasses
- 1/4 tsp salt
- 1 tsp vanilla extract
Instructions
1. Preheat your oven to 350°F (177°C) and line a baking sheet with parchment paper.
2. Using a hand mixer, cream together the softened butter and sweetener until fluffy and creamy.
3. Add in the molasses, salt, cinnamon, ginger, ground cloves, and vanilla extract.
4. Mix in the almond flour and coconut flour until a smooth dough forms
5. Use a medium cookie scoop to portion out the dough onto the lined baking sheet. Flatten the cookies with your hands.
6. Bake for 18-20 minutes or until the edges turn golden brown.
7. Allow the cookies to cool completely before transferring them to a plate.
Notes
- Make sure cookies are completely cool before transferring them to a plate, that way it stays in tack.
