Ingredients

  • 2 tablespoon olive oil
  • 1 onion chopped
  • 2 bell peppers chopped
  • 4 celery stalks chopped
  • 6 garlic cloves minced
  • 2 large tomatoes chopped
  • 1 cup broccoli slaw (optional)
  • 1 green cabbage head chopped
  • 9 cups low-sodium broth chicken or vegetable broth
  • 1 tablespoon tomato paste
  • 1 teaspoon ground black pepper
  • 1 tablespoon ground turmeric
  • 2 cups baby spinach
  • 1 Juiced lemon
  • salt (to taste)

Instructions

Instant Pot:

  • Press sauté function.
  • Cook onion, bell pepper, and celery in oil for about 5 minutes until softened. Add garlic and cook for 1 minute.
  • Add tomato, broccoli slaw, cabbage, broth, tomato paste, pepper, and turmeric. Secure lid and set on high for 15 minutes.
  • Allow natural release for about 20 minutes. Stir in spinach, lemon juice, and a pinch of salt.

Slow Cooker:

  • Cook onion, bell pepper, and celery in oil in a skillet for about 5 minutes until softened. Add garlic and cook for 1 minute.
  • Transfer to the slow cooker, add all other ingredients except spinach, lemon juice, and salt and secure lid.
  • Cook on high for 2-4 hours or low for 8-10 hours. Stir in spinach, lemon juice, and a pinch of salt.

Stovetop:

  • Cook onion, bell pepper, and celery in oil in a large pot for about 5 minutes until softened.
  • Add garlic, cook for 1 minute and stir in all other ingredients except spinach, lemon juice, and salt.
  • Bring to a boil, then reduce heat and keep covered on low heat for 30 minutes or until veggies are tender. Then stir in spinach, lemon juice, preferred amount of salt and enjoy!

Notes

  • Refrigerate: In an airtight container is good for 5-7 days. 
  • Freeze: Soup stays delicious in freezer for 4-6 months.
