Chunky Beef Lentil Soup

Ingredients
- 2 tablespoons olive oil or avocado oil
- 1 pound boneless beef chunk cut into 1-inch cubes
- Salt and freshly ground black pepper
- ½ teaspoon ground cumin
- 1 large carrot peeled and medium diced
- ½ large onion chopped
- 3 garlic cloves chopped
- 1 cup dry red wine such as merlot or cabernet sauvignon
- 9 cups beef broth
- ½ tablespoon tomato paste
- 1 cup dry brown lentils washed and rinsed
- ½ lemon
- ¼ cup fresh parsley chopped
Instructions
- Season beef with salt, pepper, and cumin in a medium bowl. Cover and let sit for 30 minutes.
- In a large stainless steel pot, heat oil over medium-high heat. Brown the beef for 6-8 minutes, stirring occasionally.
- Take beef out of pot and transfer to another bowl.
- In previous used pot, reduce heat to medium, add carrots and onion.
- Cook until onions are translucent (about 4 minutes), then add garlic and cook for another minute. Then return beef and juices to the pot. Add wine, broth, and tomato paste. Stir well.
- Bring soup to a boil, then reduce heat, cover, and simmer for 30 minutes, stirring occasionally.
- Add lentils and baking soda. Continue simmering uncovered until beef and lentils are tender (approximately 35-40 minutes, checking and stir after 20-30 minutes).
- Season with salt and black pepper. Remove from heat and stir in lemon juice and parsley. Serve and enjoy!
