Low Carb Banana Bread

This moist and incredibly easy-to-make low carb banana bread is not only gluten- free, but can also be a great choice for breakfast or an afternoon snack. This naturally sweetened, sugar- free bread recipe, will satisfy your sweet tooth cravings, while also providing essential vitamins and nutrients.

Ingredients

  • 1 ½ cup almond flour or ground almonds, 150g
  • ½ cup mashed banana 2 small or 1 large, very ripe, 120g
  • 3 eggs large
  • 2 tablespoon butter, melted 28g
  • ¼ cup granulated sweetener 50g
  • 2 teaspoon cinnamon
  • 1 teaspoon baking powder
  • ¼ cup walnuts, crushed 30g

Instructions

1. Preheat the oven to 180°C (356°F).

2. Use an electric mixer to blend the eggs, mashed banana, and melted butter until smooth.

3. In a separate bowl, combine the dry ingredients: almond flour, sweetener, cinnamon, and baking powder. Add this mixture to the bowl with the egg, banana, and butter mix. Blend until well combined.

4. Next, add the crushed walnuts, reserving some to sprinkle on top of the bread.

4. Line a small loaf tin (approximately 7 x 3.5 inches or 1 lb) with parchment paper and pour in the dough. Sprinkle the remaining walnuts on top.

5. Bake for about 40 minutes or until a knife inserted comes out clean. Check at the 30-minute mark. If the top is already brown enough, loosely cover it with aluminum foil to prevent burning.

6. Allow the banana bread to cool completely before slicing.

Notes

  • You can choose whether or not to add walnuts. If you prefer, you can use different nuts or even swap them out for sugar-free chocolate chips.
  • Adding a small amount of nutmeg is also a good option.
  • If you have a standard 9 x 5 inch loaf tin, and you'd like to make a larger batch, simply double the recipe. Just remember to extend the baking time to around 55-60 minutes.
