Crispy Chickpea Fries

Chick pea flour fries are popular in Southern France where they are called 'Panisse". This popular side dish or snack is a great way to incorporate the heart healthy benefits of chick peas into your diet. This nutritious fried food alternative is a great way to lower your cholesterol and improve your overall healthy!

Ingredients

  • 4 cups water
  • 2 cups chickpea flour (garbanzo bean flour)
  • 1 teaspoon kosher salt
  • 1 1/2 cups extra virgin olive oil,
  • Flaky salt
  • Black pepper

Instructions

1. Boil 4 cups of water in a large saucepan.

2. In a medium bowl, sift 2 cups of chickpea flour and whisk in 1 teaspoon of kosher salt.

3. Generously coat an 8- or 9-inch square or round baking pan with olive oil.

4. While whisking, slowly pour the chickpea flour mixture into the boiling water. Reduce heat to medium-low and cook, whisking constantly, until it looks like glossy, sticky cake batter with small lumps, about 20 minutes. Season with more salt if needed.

5. Pour the mixture into the baking dish and smooth the top with a spatula. Let it cool completely, about 90 minutes. (Or cool on the counter for 15 minutes, cover with plastic wrap, and refrigerate for 30 minutes to speed up the process.)

6. When ready to fry, turn the baking dish upside down on a cutting board to remove the slab. Cut it in half, then crosswise into 3/4-inch-thick pieces (you can adjust thickness to your liking)- Pieces should resemble French fries.

7. Heat 1 1/2 cups of olive oil in a large skillet to 350ºF. In batches of 5 or 6, fry pieces until golden-brown all over, about 2 1/2 minutes per side. Place on a paper towel-lined plate. Season with kosher salt, flaky salt, or freshly ground black pepper.

8. Enjoy with Sriracha mayo, harissa mayo, your favorite dipping sauce, or a squeeze of lemon.

Notes

  • To store, place any leftovers in an airtight container and refrigerate for up to 4 days.
