Ingredients
- Salad:
- 1 pound broccoli
- ½ cup chopped red onion
- 4 ounces cheddar cheese grated
- 8 ounces bacon cooked according to package directions
- ⅓ cup pumpkin seeds
- Dressing:
- ½ cup mayonnaise
- 1 tablespoon apple cider vinegar
- ¼ cup Dijon mustard
- 2 teaspoons lemon juice
- 1 tablespoon Swerve or sweetener of choice
- 1 teaspoon minced garlic
- Salt and Pepper to taste
Instructions
- Start by chopping up that broccoli into bite-sized pieces.
- Grab a big pot and fill it up with about 3 inches of water. Get it boiling.
- Toss in the broccoli and let it cook for just 3 minutes.
- Now, drain it and quickly dunk it into a bowl of ice water. Let it chill out for a bit, then drain it again.
- Alright, the broccoli's prepped. Throw it into a big bowl and mix in some chopped onion, shredded cheese, crispy bacon, and wholesome pumpkin seeds. Time to dig into this nutritious powerhouse!
(Optional) Dressing: - Whisk together some mayonnaise, apple cider vinegar, zesty Dijon mustard, fresh lemon juice, a touch of Swerve, and some minced garlic for a flavorful dressing.
