  • DRESSING:
  • 1 tbsp olive oil
  • One tbsp lime juice
  • 1 garlic clove minced
  • ¼ teaspoon salt
  • SALAD:
  • 1 cup watermelon small cubes
  • 2 cups sliced cucumber
  • 1 avocado small cubes
  • ⅓ cup onion chopped
  • ½ cup feta cheese crumbled
  • ¼ cup basil or mint leaves Torn in small pieces
  • ½ jalapeño or seasoning pepper thinly sliced (optional)
  • Salt & Pepper to taste

Instructions

  • whisk together dressing ingredients In a small bowl
  • Set Feta Cheese aside and combine all of the salad ingredients- in another bowl.
  • Drizzle dressing over salad then crumble feta cheese on top so that it doesn't soak up the moisture too much.
  • Serve and enjoy!
